Best Breakfast Recipes: Walnuts Pancakes with Agave Syrup

Dear Alice,

Today I will share with you yet another delicious breakfast recipe: walnuts pancakes with agave syrup. This is a nutritious recipe, which is fast to prepare and which will add an extra portion of source and energy to your day.

  • Ingredients (for 2 Portions)
    • For the pancakes:
    • 2 Eggs
    • 120 grams Flour
    • Pinch of Salt
    • 250 ml Milk
    • (Optionally) Zest from 1 Lemon
    • For the walnuts composition:
    • 100 grams grated Walnuts (Almonds or Hazelnuts; if fact any types of nuts you prefer and you are not allergic at)
    • 100 ml Milk
    • 1 (up to 2) Spoons Agave Syrup (depends on how sweet you prefer your pancakes; I use 1 Spoon of Agave Syrup and it is sweet enough; just make a couple of experiments until you decide how you prefer your mixture)
    • Pinch of Cinnamon
    • Pinch of Cardamon
  • Preparation
    1. For preparing the pancakes: Add all the ingredients together in a bowl, i.e. mix the milk with the eggs, the flour and the pinch of salt until you get a smooth batter. Optionally add the lemon zest if you are using any. Hint: If you heat your milk before adding it to your composition, your batter will become quite fast very smooth.
    2. Fry the pancakes in the frying pan with olive oil or with coconut oil (as you prefer; just be sure you like coconut taste, since the coconut oil is quite strong). Usually I get 4 pancakes from this batter composition, but depends on your pan you can get a different number (it is perfectly okay; just make sure to split the walnuts composition for all of your pancakes). If you are using a special pancake pan for frying the pancakes, then add 1 spoon of olive oil (or coconut oil) directly to the batter, and then fry the pancakes directly in the pan.
    3. For preparing the walnuts composition: Heat the milk in a pot. Add the walnuts and the Agave syrup. Retrieve from the stove, add a pinch of cinnamon and of cardamon. Keep the composition warm until the pancakes are done.
    4. Add the walnuts composition to the pancakes and roll them while still warm.
    5. Serve the pancakes with grated walnuts or with vegetarian whipped cream.

I prepared this recipe last weekend and it was simply delicious. Enjoy and don’t forget: a smile a day keeps the doctor away!

Sincerely yours,
Madalina
