Best Recipes Ideas: Strawberries Cake with Pistachios

Today I would like to present you a delicious recipe for a birthday or an anniversary cake, and that is a yogurt strawberries cake with pistachios. This is one tasty recipe, that will require some time from your side, still it is some time very well invested, and plus the cake is quite easy to prepare.

So here it goes:

    • Ingredients: (1 Cake of About 14-16 Pieces)
      • For the cake dough:
      • 4 Eggs
      • 80 grams Sugar
      • 80 grams Flour
      • 20 grams Cornstarch
      • 30 grams chopped Almonds
      • For the creme:
      • 10 Leaves White Gelatin
      • 500 grams Strawberries
      • 500 grams Cream Cheese
      • 250 grams Yogurt
      • 120 grams Sugar (or 100 grams Sugar if you do not like very sweet desserts; if children will also be among your guests, than I advice you to opt for the sweater variant 🙂 )
      • 2 Teaspoons Vanilla Sugar
      • 4 Spoons Lemon Juice
      • 400 ml Whipped Cream
      • 3 Spoons Cold Water
      • For the topping:
      • 100 grams chopped unsalted pistachios
      • Strawberries
    • Preparation:
      1. For the cake dough: split the eggs. Beat the egg whites, then add the sugar and beat the eggs further until you obtain a stiff composition. Separately, beat the egg yolks and then add them to the stiff eggs-whites-sugar composition. Mix the flour with the cornstarch and add it to the eggs-mixture. Add the almonds to the egg-flour composition. Add the cake dough to a tray (filled with baking paper) and bake it for like 12 minutes (or until it is light gold) in the preheated oven (200 grad Celsius). Take the dough out of the oven and let it cool. Put the cake dough to a serving platter and add a cake ring around the dough.
      2. For the creme filling: dissolve the white gelatin in the cold water. Wash the strawberries. Keep a couple of strawberries for ornamenting the cake and cut the rest of the strawberries in halves. Split the strawberries (cut in halves) in 2 even parts: cut 1 part in even smaller pieces, and mash the other strawberries (cut in halves) with the blender. Mix the cream cheese with the yogurt, the sugar, the vanilla sugar, and the lemon juice. Beat the whipped cream. Shortly cook the gelatin-water mixture in a pot on the stove. Afterwards remove from the stove and add 2 spoons of the cream cheese mixture to the gelatin mixture in the pot. Mix this and then add it to the whole cream cheese mixture mixing continuously. Divide the cream cheese mixture in 2 portions. In one portion add the strawberries (cut in small pieces) and the strawberries mashed with the blender. Divide the whipped cream also in 2 portions. Add 1 portion of whipped cream to the strawberries-cream cheese mixture, and the other half of the whipped cream to the cream cheese mixture.
      3. Add the strawberries-cream cheese mixture to the cake dough surrounded by the cake ring. Then add the cream cheese mixture to the cake.
      4. Cool the cake in the refrigerator for at least 4 hours.
      5. Remove the cake ring and add the pistachios on top of the cake and on the sides. Add the strawberries as topping as well and serve the delicious cake.
