Best Recipes: Bananas Bread with Coconut Oil

Today I will share with you a delicious dessert recipe, and that is the bananas bread with coconut oil recipe. It is easy and fast to make, extremely delicious and healthy as well. Plus it is very useful when you have some rife bananas left around in your kitchen, and you do not know what to do with them.

INGREDIENTS (for 12 Portions)

  • 200 Grams Whole-Spelt Flour (or in German Dinkelvollkornmehl)
  • Baking Powder (i.e. half a package, or around 10-11 grams)
  • Pinch of Salt
  • 2 Eggs
  • 100 ml Coconut Oil
  • 80 ml Maple Syrup (or Coconut Syrup, or Agave Syrup, or Honey)
  • 3-4 Bananas
  • 100 grams grated Almonds
  • 80 ml Milk (either Almonds Milk, or normal Milk, as you prefer)

PREPARATION

  1. Mix the coconut oil with the maple syrup. Usually the coconut oil should be at the room temperature so that you can obtain a consistent paste.
  2. Mash the bananas in a bowl with the fork. The bananas that you use should be ripe (i.e. mature).
  3. Beat the eggs in a separate bowl, and then add the coconut-oil-maple-syrup mixture to the eggs and mix them all together until you get a smooth composition. Add the mashed bananas to the composition as well and mix them all together.
  4. Mix the flour with the salt and the baking powder in a bowl.
  5. Add the flour-composition and the milk alternatively to the eggs-composition.
  6. Preheat the oven at 180 grades Celsius (i.e. hot air, or Heissluft in German). In an oiled baking form (use coconut oil for oiling the baking form), add the dough and distribute it uniformly.
  7. Bake the banana bread for around 55-60 minutes. If after 40 minutes the upper part of the bread is already golden, add a cooking foil on the baking tray and leave it bake for the rest of the time. This will keep you the banana bread golden on the surface and will still make sure to bake it on the inside.
