Best Breakfast Recipes: Spelt Pancakes with Fried Bananas

Today I will present you another delicious breakfast recipe, and that is the spelt pancakes with fried bananas recipe. This is the perfect recipe for a great start to your day.

This recipe uses spelt flour (as you noticed), which in German is basically called “Dinkelmehl”. In Austria this flour is quite popular either at home or in the bakery for the flour based products. Basically the spelt flour is an alternative to wheat flour. The spelt flour is high in protein and it adds a sweet and a nutty flavor to all of your favorite recipes, being recommended for pancakes, scones, banana bread or muffins. For some people it is even healthier since it is easier to digest than the wheat flour. So here is my recipe of spelt pancakes with fried bananas:

Ingredients (2 Portions):

  • 100 grams Spelt Flour
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Fresh Lemon Peel
  • 2 Eggs (preferably Bio-Eggs)
  • 200 ml. Milk (or alternatively Coconut Milk or Peanut Milk)
  • 1 Teaspoon Rapeseed Oil
  • 3-4 Teaspoons Rapeseed Oil for Frying
  • 2 Bananas

Preparation:

  1. Add the spelt flour in a bowl and mix it together with the vanilla and the lemon peel.
  2. Add the 2 eggs and 1 teaspoon of rapeseed oil and mix the components together.
  3. Gradually add the milk to the composition and stir until you get a smooth dough composition.
  4. In a heated frying pan, add 1 teaspoon rapeseed oil. Use a good ladle for pouring dough for the pancake in the frying pan. Usually 1 ladle of dough will give you 1 pancake. Fry the pancakes in the pan with a cover pot until they are done on one side. Then turn the pancake and fry it on the other side as well, but this time without the cover pot.
  5. While frying the other pancakes, heat the oven at 50 degrees Celsius and keep the pancakes warm in a bowl in the heated oven.
  6. When done with frying all the pancakes, add the rest of the rapeseed oil to the frying pan. Cut the bananas in small pieces longitudinally and fry them in the heated pan for 2-3 minutes on both sides.
  7. Serve the warm pancakes with the fried bananas and enjoy them! Usually I get 4-5 pancakes from this dough.
