Best Recipes Ideas: Raspberries Cheesecake In Glass

Today it is time for a brand new and delicious recipe. This time the “Raspberries Cheesecake in Glass” recipe, which I hope will become one of your favorite deserts. I love this recipe: it is tasty, it is healthy, it is easy to prepare and it requires no baking time. Just delicious!

There are a lot of recipes for cheesecake in glass out-there, so I am sure you have a wide variety of choices, I will present you my recipe, which is adapted and inspired from several recipes out there of course. What I love most about this recipe are the Oat biscuits and of course the raspberries. By the way, you can use any type of berries for this recipe.

  • Ingredients (for 4 Portions)
    • For the cheesecake creme:
      • 500 gr. Quark Cheese (or Cream Cheese or in Austrian Topfen) (I always use the free of lactose variant for the cream cheese)
      • 200 gr. Yogurt
      • 2 Spoons Honey (as alternatives you can use Agave Syrup or Maple Syrup)
      • 2 Spoons Lemon Juice
    • For the crust:
      • 150 gr. Oat biscuits (or Graham crackers)
    • For the topping:
      • 2 Bowls Raspberries (or Strawberries, Blueberries or any other berries of your choice)
    • For the equipment:
      • 4×370 ml Weck Glasses (or something similar)
  • Preparation
    1. Add the biscuits in a plastic refrigerator kitchen bag and crumble them with a hammer until they are finely ground.
    2. Divide the biscuits evenly to the 4 glasses.
    3. Wash the raspberries and add them to the 4 glasses. Alternatively you can also you frozen raspberries (or any other frozen berries). During the winter I always use frozen raspberries and I can assure you the recipe is as delicious as with fresh raspberries. Just make sure to defrost the raspberries before using them in the microwave for instance.
    4. Mix with an immersion blender the cream cheese with the yogurt, the honey and the lemon juice until you obtain an homogeneous and creamy composition. Add the cream cheese based composition evenly to the 4 glasses with a spoon.
    5. Cool the cheese cake glasses in the refrigerator for at least 45 minutes. Add as topping to the cheesecake some grounded Oat biscuits or any chopped nuts of your choice (i.e. walnuts, almonds, pistachios, cashews), or both.
